That was an awesome recipe Darin. I substituted the habernaro for 1 Anaheim and a Serrano. I went a bit overboard with the blender and got the tomatos blended a bit to much but it was still good. Didn't have any tequila and the liquor stores are closed here on Sunday.

I've got tons of Spam recipies if that's your taste. Basically anything that can be done with any meat, Spam to the rescue!!!

It's like the food version of duct tape, can be used for just about anything.
'03 Indy 500 sks (Scumpman's Kicka** Snowmachine) extended skid/track to 136" from TracksUSA, AC roller clutch, Holtzman Tempaflow, clutched and geared, 2" risers, skidplate, old Pol rack.

its just north of park falls, i used to live on butter nut lake. always like butter nut, cant beat the feed stations bait prices, and they are nice people.

Very cool.
Normally I leave the diced tomatoes and the diced onions out of the blender though,
It makes for a more chunky salsa.
That's a prefference is all.

My tomatos seemed real chunky and the rest of the stuff didn't blend real well. It all got well blended real fast when I dumped everything in.

Chad, you should help Eric to organize putting together a "Fanatics cook book"
I would for sure buy one! It would take some time on how to organize and edit it, but the end result would be pretty good I'm sure.
Maybe you could have even a section on trail side snack that people make, like jerky, eyc...

the girlfriend has a sweet chicken enchilada recipe similar to that bit uses a rotisseire chicken instead of cooking the breasts. She doesn't like to cook so it works for her. I am eating leftovers from that meal for the last 3 days

simple and quick,
boneless chicken breast, sliced thin 1/2" to 3/4"
add olive oil to cover the bottom of a 10" - 12" pan
add in 1tbsp of crushed garlic.
add directly to the chicken while they are cooking "franks red hot" or "tabasco" hot sauce (or your favorite hot sauce).
cook the chicken breast on one side until the chicken is cooked half way through flip add more hot sauce and cook until done.
this can be served with corn or green beans, both go well with it.
another side that goes well is mashed potatoes.
