There is actually a whole vintage snocross event held in Kincardine, ON in January with a ton of different classes. Never been there, but it would probably be a good thing to look into. A good vintage racer would probably be a 1980 Kawasaki Invader 440 liquid. A family friend of ours owns one and he has it piped and clutched and it pulls like you wouldn't believe. Lifts the skis off the ground like its nothing.
