It all depends on how tall you are and what height you are more comfortable at. Unbolt your bars and, while standing on your sled, raise them to the height you want. Measure the gap between your mounting post and bars and that's how much rise you should get. You may need extensions for your cables depending on how high you go.
On my 02 Renegade (ZX chassis) I'm running somewhere like 8-9" rise over stock, and I'm about 6' 2" and 190lbs. I personally like RSI products the best.
extensions ill be needed. my '99 formula 500 wouldnt allow 2"+ due to the thumb and hand warmers. the throttle and brake will allow for more. check with your local dealer for mroe info on that though, i dont know much more than that.
