My engine always has wet plugs (carbs are jetted leaner than they should be, working on that) and it revs slower than I think it should and can make one heck of a smoke fog. what are the signs of too much oil being injected??

You could also simply monitor how much oil your engine is using. If your using one tank of oil on one tank of gas, than it's probably using way too much.

you could compute your oil usage ratio...

normal sleds should run average of 50:1. Just see exactly how much oil you use for a certain amount of gas you use, and figure it out (a little math conversion skills are needed here).
